Ingredients
  • 15 oz. pureed sweet potato
  • 4 egg whites
  • 1  tsp. vanilla extract
  • 1.2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 tsp. cinnamon
  • 1/2 cup white whole wheat flour
  • 3/4 cup oat bran
  • 9 seconds Pam
Instructions
  1. Preheat oven to 350 degrees and coat a 9 count muffin tin with 9 seconds of Pam.
  2. Combine all the ingredients besides for the flour and oat bran and mix well.
  3. Combine oat bran and flour without overmixing.
  4. Bake for 25 minutes.
