Ingredients
Spicy Mayo
  • 1/3 cup light mayonnaise
  • 1 tbsp. Sriracha hot sauce chili sauce 
Salad
  • 2 cups cooked brown sushi rice
  • 3 sticks kani - shredded
  • 1 avocado - sliced
  • 1 Kirby cucumber - sliced
  • low sodium soy sauce - optional
  • 1/2 tsp. toasted sesame oil
Instructions
  1. Mix the spicy mayo ingredients and set aside.
  2. In a large bowl, mix the salad ingredients.
  3. Mix in the spicy mayo.
  4. You can add soy sauce on top as you would a roll of sushi.

Divide into 4 lunch servings
