Zucchini Pasta

Ingredients
  • 2 cubes frozen garlic
  • 3/4 cup tomato sauce
  • 2 cubes frozen basil
  • 1 tomato - diced
  • 2 tsp. butter
  • 2 tsp. oat bran
  • salt & fresh cracked pepper - to taste
  • 1 medium zucchini - jullienne peeled
  • 3 medium portabella mushrooms - sliced thinly
  • 4 oz. spinach
  • 1/3 cup low-fat milk
  • 3 tbsp. parmesan cheese
  • Pam
Instructions
  1. Coat a large pan with 3 seconds of Pam and heat on a medium flame.
  2. Add the garlic, tomato sauce, basil, tomatoes, butter, oat bran, and spices to taste. Cover and simmer for 10 minutes.
  3. Add the zucchini, mushrooms, and spinach to the pan.
  4. Slowly pour in the milk, mixing well.
  5. Mix occasionally until it comes to a full boil.
  6. Add the parmesan cheese and let sit on the fire for another 5 minutes.

Count as a one pot dinner
